The Dumpling Bar
We’re on a mission to make the best dumplings in the city.
Our dumpling bar at Globus Bellevue is designed as a fast-paced, quality-driven, and vibrant operation, where great food meets efficient, friendly service. The concept is strongly focused: dumplings arrive frozen and are finished on-site through steaming, assembling, and mise en place, ensuring fast delivery and high quality.
This location is a key step in Madame Sum’s expansion and will serve as a reference for future openings.
Tasks
We are looking for an Operations Lead who is equally comfortable serving guests at the counter and running the kitchen station. This is a hands-on role at the heart of the operation, combining service leadership, kitchen execution, and team management. This is a hands-on, on-the-floor role. You will be actively involved in service during lunch, dinner, and weekends.
You will take ownership of the daily operation, lead by example during service, and help build a strong service and kitchen culture as the brand grows. For the right person, this role offers clear room for growth and increased responsibility over time.
Guest experience & service
- Welcome guests, take orders, and manage the counter during service
- Deliver fast, friendly, and consistent service aligned with brand standards
- Handle peak service moments with calm and efficiency
- Be a visible and approachable leader for both guests and team
Kitchen operations
- Execute on-site food preparation: steaming dumplings, assembling dishes, and managing mise en place
- Ensure correct handling of frozen products and adherence to preparation procedures
- Maintain speed, accuracy, and consistency during service, execute basic inventory control
- Ensure strict compliance with hygiene, food safety, and cleanliness according to HACCP
Team leadership
- Manage opening and closing procedures and resolve operational bottlenecks in real time
- Lead, train, and support team members across service and kitchen tasks
- Ensure all staff are cross-trained between counter and kitchen stations
- Build and manage schedules
- Ensure fair workload distribution, rest periods, and clear communication
- Act as the main point of reference for the team during shifts
Organisation & optimisation
- Work closely with the founders to refine processes and workflows
- Help document operational standards for future locations
- Contribute to building a scalable, repeatable fast-casual model
- Continuously look for ways to improve efficiency and guest satisfaction
Requirements
Experience & skills
- Available within two weeks
- 2–5 years of experience in hospitality or fast casual dining / QSR
- Comfortable working both front of house and in the kitchen
- Solid understanding of basic kitchen operations (mise en place, steaming, food handling)
- Strong service mindset with genuine enjoyment of customer interaction
- Able to manage high-volume service with speed and precision
