Head Chef for Winter Season in the Swiss Alps

We are looking for a Head Chef to join us for the upcoming 2024/25 Winter Season.

Berghaus Toni is a 17 bedroom (50 Bed) Family run Hotel based at 1930 meters with a 70 cover Restaurant and 40 cover Terrace. It is based in the car-free Village of Riederalp, which is part of the Aletsch Arena Resort in Wallis, Switzerland.

The menu is varied with Local and Regional dishes such as Raclette, Cheese Fondue, Rösti, Cholera and Walliser Teller being served at Lunch and Dinner times everyday. As we are members of the Saveurs du Valais (11 years) all recipes must be followed exactly and training will be given.

We also offer a range of International dishes on our Menu such as Salads, Pastas, Fish & Chips, a daily set menu at lunch and dinner catering to dietary requirements as necessary.

Tasks

Main Role:

Responsibility for the day to day kitchen operations including (but not limited to);

Day to day menu planning based on the high or low season periods in the season.

Supply chain management; purchasing products in line with set budgets and using Company Suppliers and their products.

Liaising directly with the owner(s) regarding all operational matters

Stock management and controls ensuring wastage is kept to a minimum.

Maintaining and driving standards with food quality and presentation.

Managing all aspects of Food Safety and Health & Safety (HACCP).

Assist with menu planning for daily Set Menus and Group menus.

Requirements

Someone from within the European Union.

Individuals who are Motivated, can work Independently and within a Team and who has previous experience in leading and managing a Kitchen team in a Restaurant and or Hotel Kitchen.

A minimum of 2 years of previous experience as a Head Chef is preferable with a varied background in Restaurants being a must.

The Winter season starts on Wednesday 4th December 2024 and ends on or around 22nd April 2025 (date to be confirmed at least 2 weeks in advance).
